Carve + Craft brings together the fire and finesse of Executive Chef Ryan Watson with the passion and precision of Driftwood Brewery for a high-energy, five-course craft beer pairing experience.
Founded in 2008, Driftwood was built on one simple idea: brew the beer we love. Nearly two decades later, that philosophy still drives every pour.
Gary Lindsay - affectionately known as The Purveyor of Precious Liquids - has been immersed in beer culture for decades. Today, as Sales Director and a core visionary behind the brand, his deep knowledge of brewing styles is matched by his love of great food and great company. Expect thoughtfully curated pairings and stories behind the beers that make each sip even better.
In the kitchen, Chef Ryan Watson brings serious culinary credentials with an authentic, ingredient-driven approach. After earning his Red Seal and honing his craft in renowned Canadian resort kitchens, including Fairmont Banff Springs’ 1888 Chop House, he now leads Carve Kitchen + Meatery with a focus on sustainably sourced meats, local farmers, and seasonal produce with much of it grown right here in the resort’s 22,000-square-foot garden, greenhouse, and orchard.
This is craft meeting craft, elevated, but never pretentious. Thoughtfully plated. Boldly poured.
